Neil,
You probably need to change how you are entering the date in the first
place. If you are using Insert>Text>Date & Time then I think by default the
little box captioned "update automatically" is ticked in the Insert Date and
Time dialog box.
This results in Word inserting a "Date" field in the document. You can see
that by clicking the date and toggling the field code. Change that field
code to "CreateDate" udpate and toggle again and the current document should
be fixed. Untick that box and future new documents should not give you
problems.
If you are using a template that automatically dates new documents then you
would want to use a CreateDate vice Date field.
