Datafields disappear in PIVOT table

Created a Excel 2003 pivot table by placing items in the Page area and the Data area. In the Datafields Data drop down, If I uncheck Show All, then check a selected few items and see the results. Then I go to the Data drop down and Show All and the few items I previously selected are the only items available. If I immediately go to Edit->Undo, I can get the entire list back. Otherwise I Can't Undo or ctrl-Z. How do I get my full list back?
