I changed my Outlook today view to winter mode and now the customize button
in the Outlook today bar disappeared. How can I get the button back in order
to change the layout of Outlook today?

I've noticed that if the Outlook window is a certain size, the Customize
button can get overwritten is such a way that it doesn't show. Try changing
the window's size, making it larger. Also try adding more days to the
calendar display in Outlook Today. You can edit the registry for that,
since you can't access the Customize button.

Or, if you use the shortcut key Alt+U, you should see the line bottom right that offers to customise
outlook today.. click on that and away you go.
