I have created a "customized outlined number list" in Bullets and Numbering.
I am able to use it for the first set of text that I want in a tiered bullet
format (using indents, etc). However, when I attempt to use it for my second
set of text, by pressing the bullet button on my toolbar, it defaults back to
whatever my single bullet default it.
How can I have it default to the "customized outline number list" I created
without going in to Bullets and Numbering/Outline Numbering every time?

You will have to set up numbering via styles; that is the only way you can
safely reuse numbering formatting in Word. For a single-level list you
can use the built-in List Number style, which can be modified (see
http://www.shaunakelly.com/word/styl...ifyAStyle.html) to suit your
needs.
