Custom Email Form

Is there an easier way to access a custom e-mail form than Tools>Forms>Choose
a Form>User Templates in File System>custom form?
I had just begun using Outlook 2002 when I upgraded to Office 2007. Seems
that I recall creating a customized email (with company logo and my
signature, for instance) that displayed when I accessed New Message. What
about having a choice based on the default email when multiple accounts
exist? Thanks.
