I really like the categories, but I have a couple of questions:

Is there a mechanism to select truly custom colors, or am I restricted only
to those which are immediately available in the category setup dialogs?

Can I sort categories between colors, and vice versa, after they are defined?

1. you are limited to the colors that are defined.
2. no, you can't sort them.

As Diane mentioned, you can't sort by colors. But you could achieve that by
using prefixes for the category names, e.g.: All of the red colored
categories start with '01 ...', all of the blue ones with '02 ...', etc.
