While typing, the cursor jumps back to prior text so that I end up with
gobble- Thdygook.

See? Above sentence should read: While typing, the cursor jumps back so
that I end up with gobbledy-gook. Sometimes goes back just a word or two.
Sometimes to a prior paragraph.

Why is this happening and what can I do to fix it?

Are you typing with a laptop? Sometimes while typing, your hand will touch
the mouse pad and move the cursor. Go to the control panel ->hardware and
sound->mouse->advanced-> advanced feature settings->settings then either
adjust your touch pad sensitivity or disable tapping
