Basically I was wondering if it would be possible to setup a rule to:

1) Take an email and automatically move it to a folder with the senders name
2) If the folder with the senders name does not exist then create it.

No, that is not possible without some custom scripting of your own.
There is an add-in from Sperry Software which can do this though. It's
called Incoming Email Organizer.
