if I get a job as you described, I split the task in steps:
1/ analyse the first database
2/ analyse the second database
3/ see where the 2 are the same and where they are different
4/ analyse your current needs
5/ make up a new design using the results of all previous analyses
6/ make an import plan and run a test
7/ import the old data in your new project
