Create new Field Chooser entry in Outlook 2007

We monitor an e-mail account and have added the Field Chooser "Categories" so
we can indicate which Help Desk person is taking care of a particular e-mail
message. For training purposes, we would like to add another Field Chooser
option that contains names of technicians so that someone can review the
e-mail messages and then choose the technician that the call should be
assigned to. Is there a way to do this? Ideally, we'd like it to look like
this

From Subject Received Assign To
Category

Who from Sub. of e-mail Date Rec'd Tech. Name Who's
assigning

I have created a new Field Chooser option but don't see anyway to add names
to it like you do in Categories.

The spacing in my original entry is not displaying so that it makes sense.
Basically, we would like to add a new Field Chooser option "Assign To" where
we can pick a name of a person (like Category....pick a color that has a name
associated to it).

You'd need to create a selection box with the names listed, or just a text
box and the user can type in a name.

Would you be able to provide instructions for doing this? When I go to Field
Chooser and add a New Field, my options are this:

Name: I type in "Assign To"
Type: I chose "Text" (Looked at other options but nothing looks like it
will work for adding names.)
Format: "Text" is listed and I can't change it
