Create an Audit Trail of Record Changes in a Form for Access 2007

I would like instructions on how to create an audit trail for record changes
in forms and I was also wondering if there is a way to stop users from
changing records after they have entered and saved them. If there is can you
also only allow them to make changes up to 72 hours from inputing the record
then lock it from being deleted or edited in any way. This is Access 2007
please.
