How do I copy an email to a folder rather than just moving it?

drag it with your right mouse button, release, chose Copy.

Use right-click drag-and-drop; it gives you a choice between Copy and Move.

I like using the Ctrl key during drag&drop -- you'll see the cursor
change to include a [+] symbol indicating a "copy" operation.

Using RMB or LMB w/Ctrl with drag+drop works in Windows Explorer too.
