copying attachments to file share from outlook

I would like to understand if it is possible to create a process that detects
an recieved email from a specific adddress that contains an attachment and
automatically detaches this to a specific folder on a file share the
attachment name contains a date in the title which could be used to name
the file

you may trial the add-in for Outlook - Attachments Processor. It is able to
do exactly what you have described. Please read about this add-in and try
out, product page: http://mapilab.com/outlook/attachments_processor/
