How can I make a backup copy of the "Document and Settings" folder?

OS: XP/Home SP2

I have seen this question but no one seems to actually answer it. They always beat around the bush. The file NTUSER (and others) is always busy and the copy process just stops. This happens with: Drag & Drop, Copy/Paste and Send To. All I want to do is make a simple copy for backup of my data files.

Is there a reasonable way to do this without copying all of the individual folders one at a time?
