Not free... but "kind of free" since you need an OS to run your computer!
You can do that easily with Windows XP. I use it to convert PDF files into
Word format for further processing

Ghostview.

If you can copy and paste the text from Acrobat reader into a human
readable format than Ghostview can extract the text from that PDF.
Font information will be lost.
Sometimes a PDF does look like text but it contains a picture of the
text, that Ghostview cannot convert.

Are you sure that Windows XP contains functions to convert PDF files?!
From my experience, I have to install 3rd party software (Adobe Reader)
just to *view* PDFs.
