Controlling width of html emails

I have been asked to amend Outlook html emails so that the text width
of the email is restcited to a certain size, to stop the text going
across wider than the signature that we use.

I cannot remember how to do this, and can not see any "obvious"
settings for margins etc in Outlook.

What methods can be used?
