Is there a way to copy and paste my contacts to a spreadsheet that can be
used for a holiday card mailing, mail merge?

You don't need to do that. The mail merge can use your Outlook contacts right
where they are. If you really want to export them, click File>Import and
Export>Export to a file and select "Microsoft Excel".
