Based solely on your description - would bet that some other program was
run against your Outlook folder. From a purely logical perspective - Email
DisplayAs is contained in the same item as the email address and the only
way that the EDA gets changed in/by Outlook itself is if a change was made
to the email address.
The chances of an entire contact folder being affected between 2 Outlook
sessions with nothing else having been done(run) are "extremely" unlikely -
Outlook by itself would never go through an entire folder to modify
contents. So the question begs - what is the missing piece to this (what
addins are there - sync processes etc were run etc)? There is the very,
very remote chance a segment of your hard drive has become unusable with
affected sectors containing a specific piece of your PST file but that
would be a real stretch.
Before making any kind of changes to this contact folder either directly or
by any 3rd party product would strongly suggest you run ScanPST to
eliminate any potential underlying issues and also make sure that your
contact folder has not become corrupted beyond this noticed issue (making a
backup of this PST would be very adivsable before doing anything to the
contents). ContactGenie Toolkit is something that may help in regenerating
your EDAs on a bulk basis -

itself has not sustained some other serious kind of corruption under the
surface that has not yet shown itself in some way)
