When I delete a email from the everyday in box it now is forever deleted.
This was not always the case, as I would go to a individuals contact
information and open activities and be able to retrieve old emails. Please
tell me what I am doing wrong or inform me on how to retrieve old emails.

Deleteing a message EXPLICITLY makes it unavailable for future reference.
If you want to reference messages, don't delete them.
