If have mutliple contact folders with different names in my contact area of
outlook:

contact - default
EMS - secondary
Home - secondary

I know how to create shortcut to create a new contact and saves to the main
contact folder- but not for a new contact in the "EMS" or "HOME" contact
folder.

Is there a certain path I'm missing when creating shortcut?

the new contacts always go to the default folder unless one of the other
folders is open. It would be better to use categories instead of separate
folders.

In addition to what Diane said, when you create a new contact, instead of
clicking Save and Close, you can click File>Move to Folder and choose the
folder in which to save the contact.
