Double clicking on a "Group Contact" name in an address line opens up the
Group's "Properties" window allowing you to make deletions if you don't want
to send the message to all the Group's Members.

Unfortunately the deletion is not temporary. You have to remember to
re-enter the deleted names or they are gone forever.

OUTLOOK in the same circumstances deletes from that message only and not the
Group record. Is there a way to make MAIL do the same?

No, WYSIWYG. If you want OL functionality, install OL.
