When I try to send a message and if I click on 'To:' the
contacts do not appear in any of the contact folder
listings(global, All contact list, etc)

Is your Contacts folder configured as an Outlook Address Book?
Rightclick the folder-> Properties-> tab Outlook Address Book

the show this folder as n email adress books is grayed out
and. 'name of the address book:' contact (grayed out)

Than you'll have to add the Outlook Address Book service first.
You can do this by Tools-> E-mail Accounts (or Services)

If you still can't find it please post your version for step-by-steps
