is there a way that I can colour code my emails from differant sources, like
from a Exchange server, MSN, and Gmail.

I have place a rule on my outlook 07 to sort out the mail but I would like
to also sort it by colour, and then by person.

See http://www.howto-outlook.com/howto/coloremail.htm

Instead of Automatic Formatting you can also opt to use color categories.
