I used to be able to assign different colors for different incoming mail
(e.g. blue = 'To:', green = 'Cc:' and purple = 'Bcc:')

Now I can only colour the emails sent 'To:' me, and put a colored flag for
messages where I am 'Cc:'. What about 'Bcc:'? Does it have to be a flag for
'Cc:' or can the color not change for that as well anymore?

I assume you are using Outlook 2007 now? You can still use Automatic
Formatting...you just need to get to it using the Define Views command.
Click View | Current View | Define Views, choose the view you want to add the
formatting to, and click the Modify button. Then click Automatic Formatting
and you can set up your color rules there.
