Color Coding On Emails Disappears

We are running Outlook 2007 on a Zimbra exchange server. When I add a color
coding to an email it will disappear in aprox 2-3 min. Is there any way to
fix this?

I thought Zimbra was open source Linux platform and not running Microsoft
Exchange?

Does this happen to other users or just you?
