Check that you're working in a FP Web, and not just a page. (File Open Web
(FP2002 or earlier) or (File Open Site (in FP2003)).
The only way is to ask for it in the form I think, since when you receive
the email the "from" address is the site host/mail server since it is that
which is sending/processing the form's data, and not the actual user of the
form.
