Does anybody know a quick way to collapse ALL headings in one click in
both Document Map and Outline View? I'm currently collapsing each
individual Heading 1 one by one.

Really depends on the version, but in Word 2003, on the Outline toolbar,
choose Show Level 1 from the dropdown. That should show only Heading 1s.

Use the keyboard (works in Word 97 or later):

To display Heading 1 paragraphs, press Alt+Shift+1.

To display Heading 1 and Heading 2 paragraphs, press Alt+Shift+2.

[Etc.]
