Closing as many ports as I can on Windows 2003 Server

I want close as many ports as possible on my Windows 2003 Server Enterprise,
I don't run FTP or a Web Server on it, this is a global catalog and runs
DNS, DHCP, WINS and also we have a few shared folders with applications on
it, that we run installation from it.

What ports can I shout down, and what do I need to have open to accomplish
this. Thanks.

In addition to Oli's reply - close them, or block access to them from the
Internet? For the latter, put in a decent firewall.
