My daughter is using my old computer and we need to delete all of the old
information so outlook can be clean for here. how do we do that?

Delete the .pst file and make a new one. Deleting the old one will remove all Outlook data and give her a "tabula rasa" to start with. Once you delete the old one, go to Control Panel->Profiles->New. Create a new profile and then create a new .pst file for that profile.

To clean out non-Outlook data from the computer I'd recommend
http://www.ccleaner.com/
