Choosing a format for capturing and saving film

Can anybody advise the best formats to use when capturing and saving analogue
output from my VHS. I am transferring through my digital camcorder onto the
computer using WMM 2.1 and then burning to DVD using Nero 6 Ultra or Roxio
Easy CD and DVD creator 6 - usually the former. I have successfully burnt old
home movie footage but I find that pre-recorded film loses a lot of quality.
My DVD burner does not support dual layer DVDs.
I am in the UK and a beginner at this so low-tech information would be
appreciated.

DV-AVI is the best choice when capturing...
