Characters in e-mail are replaced with letters

I'm using Outlook 2007. I've sent out an e-mail using an apoostrophe in some
words and when someone responded to it and i received the thread it showed up
as "I’ll bet most of you guys didn’t". You can see the apostrophe was
replaced with 3 special characters. this has happened more than once.
Any suggestions?

That depends on the encoding settings of the sender or receiver.
Which encoding are you using?
In which encoding is the message received?
In which encoding is the message returned?

What encoding was your original sent message?
What encoding was the received reply?
