1. turn on the bcc field and close the form. it should be visible when you
reopen.
2. that's the message list - you can adjust it using the automatic
formatting options in a custom view. in the two line view, only the first
line (usually the sender's name and sent time) are affected. You can't
change the second line that I know of - but in a 1 line view, all fields are
changed. Look on the View menu for Current view, Customize.
