Is there an easy way to select a group of appointments and
change their sensitivity to private?

You could create a view of your Calendar folder that groups items by
sensitivity, and if you have at least one private item (to create a
group for private items), you can drag from the Normal group to the
Private group and that will change the sensitivity for those items.
