I just started using 2007 and it's a pain in the arse. How do I or can I
change the view from 2007 back to 2003 or something that's easier to use/find?

Reinstall 2003. That's the only way you will get the 2003 interface. There
are tools available that tend to mimic the 2003 menu structure eg
http://ribboncustomizer.com/ but frankly such tools are better used to
modify the ribbon to your own requirements.

If you are going to stick with 2007 (and the 2007 interface is the way
future development is continuiing) then you will have to learn to use it.
