Changing Icon View via group policy

Can anyone out there tell me where the setting is in group policy to change
the view from Large icons to list view. We want to change the folder view
for our users when they are using the file open or save open in office apps.
Currently they all see large icon view which is causing some confusion.

Any ideas?
