Changing dictionary from US to Australian for new msg

I can't find anywhere in Outlook to configure the Australian dictionary for
new e-mail messages.

The staff are using MS Word to compose messages, Word is set up with
Australian dictionary, but Outlook still changes Austalian spelling to US, eg
Authorise becomes Authorize.
