I am wondering how to change the way the overall Word program is laid out so
that access to my toolbars looks the same as it did in 2003. No Ribbon, in
otherwords, but my old toolbar options.

Re-install 2003. It's the only way to get the 2003 interface.

There are some third-party add-ins that you can get (buy) that will give you
a "classic" look. I haven't used any because I prefer to learn the new
interface now instead of later.

And they only vaguely resemble Word 2003. You can have some measure of Word
2003 toolbar provision albeit in an entirely different manner if you have
access to 2003 - see http://www.gmayor.com/Toolbars_in_word_2007.htm
