..Excel files stored in public folders show the original author in the title
with the file name below that. I want to remove the original author's name
as he has left the organisation. This is same with all Versions of Outlook.
We use Exchange 2003. Can't find a properties menu to configure this on
either Outlook or Exchange Systems Manager. I must be missing something
simple.

Those are properties of the Excel file so change them in Excel and resave
the file to the Public Folder.
Within Outlook, all you can do is customize the view to show the field or
not.
