I have a picture/slide used in "standard" company presentations created by a
previous employee and I cannot figure out how to change the Text inside the
picture. The name of our company has changed and I need to change the text.

This all depends on how this was created. Try clicking on the picture to
select it (if it is on the slide master, go to View>Master>Slide Master
first). From the Draw menu (which is on the Draw toolbar), choose Ungroup.
If the picture now has more handles, you might be able to select the text
and edit it. However, there is a good chance the text was added to the
picture using picture editing software. In that case, there isn't much you
can do.

If the later that David identified is the case....you can potentially create
a new text box with the new name and paste it over the existing name. This
may take a bit of manipulation of the text box background etc. Then you can
group that with the original and the new text.
