Hi,

How can I change the port that a particular service is
using eg. change the iis port from 80 to something else?

This is something that depended on the application you wants to change (i.e
IIS port can be changed).
Another way is the use some port redirector application or hardware, that
can be done in some firewalls, load balancers, etc...

As the other poster sated, it depends completely on the service or
application. IIS cange be changed by following the steps in this article:
