I'm the desktop admin, and sometimes I don't want users to know I used their
PC.
Is there a way to change the last user (I know it can be left blank) or to
make it always show the same user, no matter who logged?

Why not? Administrators should be open and honest in all their
dealings, in particular in view of their elevated access rights.
