change file opening "priorities"?

I am a Windows XP Home new user (previously used Win 95 and Win 98).

I prefer to have MGI Photosuite to open .jpg files. I have made that
change in folder options.

But, when I double click on a *.jpg file, the photo appears in Microsoft
Fax and Photo viewer.

I noticed that if I click once on a .jpg file then right click, the
first (or default) choice (which is in bold print) is "preview" which
must be opening in Microsoft Fax and Photo viewer. The second item in
the choices is "open". If I left click once on a .jpg file, then right
click once then move the highlight down one item to "open", the photo
opens properly in MGI Photosuite.

What steps can be taken to remove "preview" as the default choice and
replace it with "open"?
