All my pst files are currently stored in the default location (c:\Documents
and Settings\UserName\Local Settings\Application data\Microsoft\Outlook) for
each of two profiles. How can I change that location to, say, a sub-folder
of that location, as in c:\Documents and Settings\UserName\Local
Settings\Application data\Microsoft\Outlook\Profile1 and c:\...\Profile2?

Just move them with Outlook closed. But why would you want to do that? I
can see the logic behind moving to a different partition (for easy
backup purposes for example) but not a sub-folder of where they are
already....

After the move, use Control Panel | Mail -> Data Files to specify the
new location(s).

Why move them? Just to keep the files for each profile in separate folders
for convenienc reference.
