When I open my sent items folder in MS Outlook 2003 the displayed name is, of
course, mine. How can I change the displayed name in the sent items folder
to the recipient?

Change your view to Sent To;
View-> Arrange By-> Current View-> Sent To

The following method applies to Outlook 2002, but I assume your version to be
similar.

Open the Sent Items folder.
On the Toolbar menu click on View > Current View > Customize Current View.
Click on Fields to display the Show Fields window.
You add or remove and rearrange the column layout from there.

I'd recommend removing "From" and adding "To" in its place.
