how to change display font in Message To field.
In Outlook 2007 Chinese version, it use chinese font to display English
font, it is not good looking, is it possible to change like English version.

I don't think this is possible, or even advisable. If you put a Chinese
name, it cannot be properly displayed with a non-Chinese font.

Yes, probably you are right.

I encount same thing on the chinese version of the Excel as well. the font
of the column and row are default chinese font to display the english A, B,
C, D and 1, 2, 3 etc. which i didn't like it very much. this looks ugly,
that's why i always prefer to use English version instead.
