When saving a lot of emails it would help if the "Save as" box default could
be changed. It always comes up with "Text only" and I would like the default
to be "Message format". Is this possible?

No, instead of using File-> Save As, simply drag and drop the messages out
of Outlook and into an Explorer folder. They will be stored in the
msg-format then.
