I need to change the color of the font in the subject line when I send a
confidential message. Using Office Suite 2003

Not possible. No mail protocol supports formatting the subject field. The
subject line is being formatted by the mail client the receiver uses. Simply
set the sensitivity level of the message to confidential and/or use keywords
in the subject line to indicate such.
