On my Autocomplete list I have two entries beginning with Chuck, but their
e-mail addresses are different. Often while composing a message, I key in
"c," and pops up the box showing several Cs. The two Chucks I have are
always at the top, and I am constantly hitting the wrong one, so my message
goes to the wrong Chuck.

How do I change their entries so to make them look different from each
other?

You can't change it and make it stick- outlook creates it based on the
display name in contacts or on the messages they send you. You could change
the display name in contacts, but outlook will also use the display name
each Chuck uses.
