I've designed a website with a table that's centered on my 1024 x 768 screen.
However, I'm wondering what the best way to design it is so that someone who
views on a different size screen will see it centered as well. I used pixel
dimensions for my tables and table cells - should I have used percentages
instead?

Select the table, then table properties, then set the alignment to center.
