Category Search Folder for more than one category AND not OR

I have a lot of emails that have been given multiple categories - company
name, project title, project location for example.

I want to be able to pull together mail items that are categorised as being
from a particular company, related to a particular project.

I've tried using a custom search folder but when I do that, it returns all
emails containing either of the selected categories. I want a search that
only returns results containing both those categories.

Is this possible?

Try it with the querybuilder enabled -
